Method
Preparation and Cooking
- 1
Prepare the Collard Greens
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the collard greens, salt, and pepper, and cook until wilted. Pour in the heavy cream and let it simmer for about 5 minutes until thickened. Stir in the grated Parmesan cheese and diced Virginia ham, mixing well.
- 2
Prepare the Oysters
Preheat your oven to 400°F (200°C). Shuck the oysters and place them on a baking sheet. Spoon the creamed collard greens mixture generously over each oyster.
- 3
Top with Cornbread Crumble
Sprinkle the crumbled cornbread over the collard greens on each oyster.
- 4
Bake the Oysters
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the topping is golden brown and the oysters are cooked through.
- 5
Serve
Remove from the oven and drizzle with fresh lemon juice. Serve hot with grilled bread for dipping.
