    Prepare the Mushrooms

    Clean and slice the wild and cultivated mushrooms. Set aside.

    Sauté the Mushrooms

    In a large skillet, heat the olive oil or butter over medium heat. Add the mushrooms and sauté for about 5-7 minutes until they are tender and water has evaporated.

    Add Thyme and Madeira

    Stir in the fresh thyme and Madeira wine. Cook for another 2-3 minutes, allowing the liquid to reduce slightly. Season with salt and pepper to taste.

    Whisk the Eggs

    In a bowl, whisk the eggs until well combined. Add a pinch of salt and pepper.

    Cook the Eggs

    Pour the beaten eggs into the skillet with the sautéed mushrooms. Cook gently, stirring occasionally, until the eggs are just set and fluffy.

    Add Goat Cheese

    Crumble the goat cheese over the scrambled eggs and gently fold it in until slightly melted.

    Serve the mushroom scramble with a freshly baked buttermilk biscuit. Optionally, add creamy cheese grits, breakfast potatoes, or a simple salad on the side.
