Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt, reduce heat to low, and cook until thickened, about 20-25 minutes. Stir in butter and cheddar cheese until melted and smooth.

Cook the Shrimp

    Sauté the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the drippings in the pan.

    Cook the Shrimp

    Add olive oil to the skillet and sauté the minced garlic for about 1 minute. Add the diced tomatoes and paprika, and cook for 2-3 minutes. Season with salt and pepper. Add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes.

Prepare the Eggs

    Cook the Eggs

    In a separate pan, cook the eggs over-medium until the whites are set but the yolks are still slightly runny.

Assemble the Dish

    Plate the Dish

    Spoon the creamy cheddar grits onto a plate, top with the shrimp and sauce, and place the cooked eggs on the side. Serve with a warm buttermilk biscuit.
