Cooking Instructions

  1. 1

    Prepare the green beans

Trim the ends of the fresh green beans and wash them thoroughly under cold water.

  2. 2

    Blanch the green beans

Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop the cooking process. Once cool, drain again and set aside.

  3. 3

    Brown the butter

In a large skillet, melt the unsalted butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter turns golden brown and has a nutty aroma. Be careful not to burn it.

  4. 4

    Combine ingredients

Add the blanched green beans to the brown butter and sauté for 2-3 minutes, until heated through. Stir in the chopped preserved Meyer lemon, blue cheese, and season with salt and black pepper.

  5. 5

    Serve

Transfer the green beans to a serving platter and sprinkle with toasted, chopped hazelnuts. Serve warm.
