Method

Cooking the Brisket

    Braised Beef Brisket

    In a large pot, heat olive oil over medium heat. Season the brisket with salt and pepper, then sear on all sides until browned. Remove from pot.

    Add Salsa

    Pour in salsa ranchera, return the brisket to the pot, cover, and simmer on low heat for about 2 hours until tender.

Preparing the Beans and Tortillas

    Black Beans

    In a separate saucepan, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

    Crispy Tortillas

    In a skillet, heat a little olive oil over medium heat and fry the corn tortillas until crispy on both sides. Set aside.

Cooking the Eggs and Assembling

    Cook Eggs

    In the same skillet, add a bit more oil if needed, and crack the eggs in. Cook until the whites are set but the yolks are still slightly runny (over medium).

    Assemble Huevos Rancheros

    On each crispy tortilla, layer the braised brisket, black beans, a fried egg, and top with melted pepper jack cheese and jalapeño crema.
