Prepare the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle them with salt and let them sit for about 15 minutes to draw out excess moisture.

Dredge the Tomatoes
In a shallow bowl, combine the flour, black pepper, and cayenne pepper. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal. Dip each tomato slice first into the flour mixture, then into the buttermilk, and finally into the cornmeal, ensuring they are well coated.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated tomato slices in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Sauce
In a bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, chopped capers, minced garlic, paprika, chopped parsley, and lemon juice. Mix well until smooth and adjust seasoning to taste.
