Chicken Preparation

Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add chicken breasts and thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Dredge the Chicken
In a separate bowl, combine flour, salt, black pepper, paprika, garlic powder, and onion powder. Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge in the seasoned flour, coating evenly.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Fry chicken, skin-side down, for about 7-8 minutes or until golden brown. Flip and cook for another 7-8 minutes until cooked through. Remove and drain on paper towels.

Tasso Ham Gravy Preparation

Cook the Tasso Ham
In a skillet, cook the tasso ham over medium heat until slightly crispy. Remove and set aside.

Make the Gravy
In the same skillet, add flour and whisk until lightly browned. Gradually add chicken broth while whisking to avoid lumps. Stir in cooked tasso ham and black pepper. Simmer until thickened.
Coleslaw or Collard Greens Preparation

Prepare the Coleslaw
In a large bowl, combine coleslaw mix with mayonnaise-based dressing. Mix well and refrigerate until serving.
