Fried Catfish

    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes.

    Breading

    In a bowl, mix cornmeal, flour, cayenne pepper, salt, and black pepper. Remove the catfish from the buttermilk and dredge in the cornmeal mixture, coating evenly.

    Frying

    Heat oil in a deep skillet over medium-high heat. Fry the catfish for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

French Fries

    Prepare the Potatoes

    Peel the potatoes and cut them into fries. Soak in cold water for 30 minutes.

    Fry the Fries

    Heat oil in a separate skillet. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt to taste.

Lemon Vinaigrette Coleslaw

    In a large bowl, combine shredded cabbage and carrots.

    In a separate bowl, whisk together olive oil, lemon juice, honey, salt, and pepper. Pour over the cabbage mixture and toss to combine.

Remoulade Sauce

    Mix the Sauce

    In a bowl, combine mayonnaise, Dijon mustard, capers, lemon juice, paprika, and hot sauce. Mix well and refrigerate until serving.
