Prepare the Coating
In a shallow dish, combine cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

Soak the Catfish
In another shallow dish, pour buttermilk. Dip each catfish fillet in the buttermilk to coat.

Coat the Catfish
After coating in buttermilk, dredge the fillets in the cornmeal mixture until fully coated. Shake off any excess.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil. Fry for about 3-5 minutes on each side, or until golden brown and crispy.

Drain and Serve
Once cooked, transfer the fried catfish to a plate lined with paper towels to drain excess oil. Serve hot with remoulade sauce.
