Method
For the Cornmeal Crusted Okra
- 1
Prepare the Okra
In a large bowl, combine sliced okra with buttermilk and let it soak for about 15 minutes.
- 2
Mix Dry Ingredients
In another bowl, mix cornmeal, all-purpose flour, salt, black pepper, and cayenne pepper.
- 3
Coat the Okra
Remove okra from buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture until well coated.
- 4
Fry the Okra
In a deep skillet, heat vegetable oil over medium-high heat. Fry the coated okra in batches until golden brown and crispy, about 3-4 minutes per side.
- 5
Drain
Remove fried okra and place it on paper towels to drain excess oil.
For the Remoulade Sauce
- 6
Mix Ingredients
In a bowl, combine mayonnaise, Dijon mustard, chopped capers, lemon juice, and hot sauce. Mix well.
- 7
Season
Season the sauce with salt and black pepper to taste.
