Fried Chicken Preparation

Marinate the Chicken
In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken breasts and marinate for at least 1 hour (or overnight in the refrigerator).

Prepare the Coating
In another bowl, mix together flour and cornstarch. Dredge the marinated chicken in the flour mixture, ensuring it's well coated.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Mix Waffle Batter
In a bowl, combine mashed sweet potato, flour, baking powder, baking soda, and salt. In another bowl, whisk together milk, egg, vanilla extract, and melted butter. Combine wet and dry ingredients until just mixed.

Cook the Waffle
Preheat a waffle iron and lightly grease it. Pour batter into the waffle iron and cook until golden brown. Repeat with the remaining batter.

On a plate, stack the sweet potato waffle and top with two pieces of fried chicken. Drizzle with maple syrup to taste.
