Fried Chicken

Prepare the Chicken
In a bowl, combine buttermilk, salt, black pepper, and paprika. Add the chicken breast and marinate for at least 30 minutes.

Batter the Chicken
In another bowl, mix flour and cornstarch. Remove the chicken from the marinade, shaking off excess liquid, and dredge in the flour mixture.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 6-8 minutes on each side until golden brown and cooked through. Drain on paper towels.
Sweet Potato Waffle

Prepare the Waffle Batter
In a bowl, mix together the mashed sweet potato, flour, baking powder, and salt. In another bowl, whisk together milk, egg, vanilla extract, and melted butter. Combine both mixtures until just combined.

Cook the Waffle
Preheat the waffle iron and lightly grease with cooking spray. Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.
Serve

Place the cooked sweet potato waffle on a plate, top with the fried chicken, and drizzle generously with maple syrup.
