Prepare the Sweet Tea
In a saucepan, bring 4 cups of water to a boil. Remove from heat and add the black tea bags. Steep for 5-10 minutes, then remove the tea bags. Stir in the granulated sugar until dissolved. Allow the sweet tea to cool to room temperature.

Fermentation
Cover the jar with a clean cloth or coffee filter secured with a rubber band. Allow the kombucha to ferment at room temperature, away from direct sunlight, for 7 to 14 days, depending on your taste preference.

Taste Testing
After 7 days, start tasting the kombucha daily. When it reaches your desired balance of sweetness and tanginess, it’s ready for bottling.

Bottling
Remove the SCOBY and set it aside in a clean container. Pour the kombucha into bottles, leaving about an inch of headspace at the top. You can add flavors like fruit or herbs at this stage if desired.

Second Fermentation
Seal the bottles tightly and let them sit at room temperature for an additional 3-7 days to carbonate. Afterward, refrigerate to stop fermentation.
