    Cook the Sausage

    In a skillet over medium heat, add the diced Andouille sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add a tablespoon of butter. Sauté the chopped onion and bell pepper until softened, about 3-5 minutes.

    Prepare the Eggs

    In a bowl, whisk together the eggs, Cajun seasoning, salt, and pepper.

    Combine Ingredients

    Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs start to set.

    Add Sausage and Cheese

    Add the cooked sausage and Pepper Jack cheese to the eggs. Continue to cook until the eggs are fully set and the cheese is melted.

    Serve

    Serve the scramble hot alongside a fresh baked buttermilk biscuit and creamy cheddar cheese grits or breakfast potatoes.
