Prepare the Sides
While the brisket is smoking, prepare the coleslaw and potato salad. For the coleslaw, mix shredded cabbage, carrots, and a dressing of mayonnaise, vinegar, sugar, salt, and pepper. For the potato salad, boil diced potatoes until tender, then mix with mayonnaise, mustard, and seasonings.

Make Housemade Pickles
Combine sliced cucumbers, vinegar, water, salt, sugar, and spices in a jar. Let them sit in the refrigerator for at least 2 hours or overnight for best flavor.

Assemble the Plate
Once the brisket is done, slice it against the grain. Serve it on a Martin's potato bun topped with Texas BBQ sauce. Plate with coleslaw, potato salad, and housemade pickles on the side.
