Prepare the Mixture
In a large bowl, mash the cooked black-eyed peas using a fork or potato masher until mostly smooth but still slightly chunky.

Add Flavorings
Mix in minced garlic, chopped green onion, cilantro, ground cumin, ground coriander, flour, baking powder, salt, and black pepper until well combined.

Form Fritters
Using your hands, form the mixture into small patties, about 2 inches in diameter. You should have around 10-12 fritters.

Heat Oil
In a deep skillet or frying pan, heat the oil over medium heat until hot.

Fry Fritters
Carefully place the fritters in the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fritters from the oil and drain on paper towels. Serve warm with pepper jelly on the side.
