Prepare the crust

Preheat your oven to 180°C (350°F). In a food processor, combine the shortbread cookies and chopped pecans until finely crushed. Transfer to a bowl, then mix in the melted butter until well combined. Press the mixture into the bottom and up the sides of a pie dish. Bake for 10-12 minutes or until golden brown. Allow to cool.

Make the caramel

In a medium saucepan over low heat, combine sweetened condensed milk and butter. Stir continuously for about 10-15 minutes until the mixture thickens and turns a golden caramel color. Pour the caramel over the cooled crust and spread evenly. Allow it to set for at least 30 minutes.

Assemble the pie

Slice the bananas and layer them over the caramel. In a mixing bowl, whip the cream until soft peaks form. Spread or pipe the whipped cream over the bananas to cover completely.

Chill and serve

Chill the pie in the refrigerator for at least 1 hour before serving. Slice and enjoy your delicious Banoffee Pie!
