    Make the Custard

    In a bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

    Soak the Brioche

    Dip each slice of brioche into the custard mixture, ensuring both sides are well-coated. Allow to soak for about 2 minutes per side.

    Cook the French Toast

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the soaked brioche slices and cook until golden brown on each side, about 3-4 minutes per side. Remove from the skillet and keep warm.

    Caramelize the Bananas

    In the same skillet, add the remaining butter and brown sugar. Stir until the sugar is dissolved. Slice the bananas and add them to the skillet. Cook until the bananas are soft and caramelized, about 2-3 minutes.

    Carefully add the dark rum to the skillet and ignite with a long lighter or match. Allow the flames to subside as the alcohol burns off.
