Prepare the Filling
In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth and set aside.

Stuff the Bread
Spread a generous amount of the cream cheese mixture on one slice of bread, then top with another slice to form a sandwich. Repeat with the remaining slices.

Cook the French Toast
In a large skillet or griddle, melt 1 tablespoon of butter over medium heat. Dip each sandwich into the egg mixture, allowing it to soak briefly, then place in the skillet. Cook for 3-4 minutes on each side or until golden brown.

Remove the stuffed French toast from the skillet and serve warm with fresh berries and maple syrup drizzled on top.
