    Prepare the English Muffins

    Split the English muffins in half and toast them until golden brown.

    Cook the Canadian Bacon

    In a skillet over medium heat, cook the Canadian bacon for about 2-3 minutes on each side until heated through. Set aside.

    Sauté the Spinach

    In the same skillet, add fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.

    Poach the Eggs

    In a large pot, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon.

    On each toasted English muffin half, layer the Canadian bacon, sautéed spinach, and a poached egg. Drizzle with hollandaise sauce.
