    Preparation of Ingredients

    Begin by pressing the tofu to remove excess moisture. Cut the tofu into cubes. Clean and slice the mushrooms. Finely chop the leeks and parsley.

    Cooking the Tofu and Vegetables

    In a large skillet, heat a tablespoon of truffle oil over medium heat. Add the cubed tofu and cook until golden on all sides, about 8-10 minutes. Remove tofu and set aside.

    Sautéing Mushrooms and Leeks

    In the same skillet, add another tablespoon of truffle oil. Add the leeks and sauté until soft, about 3-4 minutes. Then add the mushrooms and cook until they have released their moisture and are browned, about 5-7 minutes.

    Combining Ingredients

    Return the tofu to the skillet with mushrooms and leeks. Add salt and pepper to taste and toss gently to combine. Cook for an additional 2-3 minutes.

    Serving

    Remove from heat and stir in chopped parsley. Serve warm topped with slices of brie cheese, allowing it to melt slightly from the heat.
