Prepare the Meatloaf
Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Wrap with Bacon
Shape the meat mixture into a loaf and wrap it with bacon slices, covering the entire surface. Place the wrapped meatloaf in a baking dish.

Bake the Meatloaf
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and salt. Place the bowl over a pot of simmering water (double boiler) and whisk continuously. Gradually add melted butter while whisking until the sauce thickens. Remove from heat and set aside.

Prepare the Sourdough
Toast the sourdough bread slices until golden brown.

Assemble the Dish
Once the meatloaf is done, let it rest for 10 minutes before slicing. Place a slice of meatloaf on each toasted sourdough slice, top with diced tomato, and drizzle with hollandaise sauce.
