Preparation and Cooking

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Season with salt and black pepper.

    Setup the Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, add the cornmeal.

    Bread the Tomatoes

    Dredge each tomato slice in flour, then dip in the egg mixture, and finally coat in cornmeal.

    Fry the Tomatoes

    Heat the vegetable oil in a large skillet over medium-high heat. Fry the breaded tomato slices until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Cook the Spinach

    In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes.

    Toast the English Muffins

    While the spinach is cooking, split and toast the English muffins until golden brown.

    On each toasted English muffin half, place a layer of sautéed spinach, top with fried green tomatoes, and drizzle with hollandaise sauce.
