    Prepare the Potatoes

    In a skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt, black pepper, and garlic powder. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.

    Stir in the chopped corned beef and diced onion into the skillet with the potatoes. Cook for an additional 5-7 minutes until the onions are translucent and the corned beef is heated through.
