Method

Preparing the Gold Spotted Sand Bass

Cook the Fish

Heat olive oil in a skillet over medium-high heat. Season the Gold Spotted Sand Bass fillets with salt and black pepper. Cook the fillets for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and keep warm.

Making the Wild Mushroom Spätzli

Prepare the Spätzli Dough

In a mixing bowl, combine flour, eggs, milk, and salt. Mix until smooth. Let the dough rest for 30 minutes.

Cook the Spätzli

Bring a pot of salted water to a boil. Using a spätzli maker or a colander, press the dough into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and keep warm.

Sauté the Mushrooms

In a skillet, melt butter over medium heat. Add wild mushrooms and sauté until tender and golden brown. Toss the cooked spätzli with the sautéed mushrooms.

Prepare the Butter Sauce

In a small saucepan, melt the stick of butter over low heat. Add minced green garlic and cook for 1-2 minutes until fragrant. Stir in Meyer lemon juice, and add salt and pepper to taste.
