Brewing Instructions

1. Mashing

In a large brew kettle, heat 5 gallons of water to approximately 160°F (71°C). Add the Pilsner and Vienna malts to the water, stirring to combine. Maintain the temperature between 150°F and 155°F (65°C - 68°C) for 60 minutes.

2. Sparging

After mashing, sparge the grains with enough water to collect around 6.5 gallons of wort in the brew kettle.

3. Boiling

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding hops at the start of the boil.

4. Cooling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 65°F (18°C).

5. Fermentation

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Ferment at 60°F to 65°F (15°C to 18°C) for about 2 weeks.

6. Bottling

Once fermentation is complete, prepare a priming solution with 3/4 cup of corn sugar dissolved in 2 cups of water. Add this to the beer, mix gently, and bottle using sanitized bottles and caps.

7. Conditioning

Allow the bottles to condition at room temperature for 1-2 weeks before chilling and serving.
