Lobster Filling

Prepare lobster
If using whole cooked lobster, remove meat from claws, knuckles and tail and roughly chop into 1/2-inch pieces until you have 1 cup. Pat dry with paper towels to remove excess moisture. If using pre-picked lobster, check for shells and chop as needed.

Combine dressing
In a medium bowl whisk together 3 tablespoons mayonnaise, 1 teaspoon lemon juice, 1/2 teaspoon Dijon (if using), 1 teaspoon sea salt and 1 teaspoon freshly ground black pepper until smooth.

Mix filling
Add the chopped lobster, 2 tablespoons finely chopped celery and 1 tablespoon chopped chives to the dressing. Gently fold just until combined, taking care not to mash the lobster pieces. Taste and adjust seasoning — add a pinch more salt, pepper or lemon if desired.

Warm with butter
In a small saucepan or microwave-safe bowl warm 2 tablespoons melted butter until just hot but not simmering. Fold the warm butter into the lobster mixture just before serving to give a warm, glossy finish. (If you prefer a cold roll, omit the melted butter and serve chilled.)

Toast rolls
Split the 4 brioche rolls along the top. Spread about 1/2 tablespoon room-temperature butter inside each roll (total ~2 tablespoons). Heat a large skillet over medium heat. Place rolls butter-side-down in the skillet and toast until golden brown and crisp, about 1–2 minutes. Turn briefly to warm exterior if desired. Alternatively, brush the outsides with butter and grill or broil until golden—watch carefully.

Assemble
Divide the lobster filling evenly among the 4 toasted rolls, mounding gently so lobster pieces remain intact. Lightly sprinkle each roll with a pinch (about 1/8 tsp) of Old Bay or smoked paprika if using, and a few pinches of chopped parsley for color.

Serve immediately with lemon wedges on the side for squeezing over the lobster rolls. Provide extra napkins — these are best enjoyed warm and fresh.
