Leeks & Potatoes

    Prepare potatoes

    Place the halved/quartered potatoes in a medium saucepan, cover with cold salted water (about 1 inch above potatoes), bring to a simmer and cook until just tender when pierced, 10–12 minutes depending on size. Drain and set aside.

    Sauté leeks

    While potatoes cook, heat 1 tbsp olive oil in a wide sauté pan over medium heat. Add the sliced leeks, 1/2 tsp salt and 1/4 tsp pepper. Cook, stirring occasionally, until softened and beginning to caramelize around the edges, about 6–8 minutes. Add the par-cooked potatoes to the pan and toss gently to combine. Cook 2–3 minutes more to marry flavors. Remove from heat and keep warm in the pan or tented with foil.

Saffron Broth

    Bloom saffron

    Place the saffron threads in a small bowl and pour 2 tbsp hot (not boiling) water over them. Let steep 5–10 minutes to release color and aroma.

    Build the broth

    In a small saucepan over medium heat, melt 1 tbsp butter. Add the minced shallot and cook until translucent, about 2–3 minutes, then add the minced garlic and cook 30 seconds until fragrant. Pour in the white wine, bring to a simmer and reduce by half (about 2–3 minutes). Add the fish or vegetable stock and the saffron with its soaking liquid, then simmer gently 5 minutes to blend flavors.

    Finish broth

    Stir in 1 tbsp lemon juice, 1/2 tsp salt and 1/4 tsp pepper. Keep the broth warm over the lowest heat; if desired, whisk in a small knob of butter (optional) to add gloss just before serving.

Fish

    Season and prepare cod

    Pat cod fillets dry with paper towels. Season both sides with 1 tsp salt and 1/2 tsp pepper (split across fillets). Lightly dust each fillet with 2 tbsp flour total (use just enough to coat) and shake off excess.

    Sear cod

    Heat a heavy skillet (cast-iron or stainless) over medium-high heat until hot. Add 3 tbsp olive oil and 1 tbsp butter. When oil is shimmering and butter foam subsides, add fillets presentation-side down (skin-side down if skin on). Do not overcrowd; sear in batches if necessary. Cook undisturbed 3–4 minutes until a golden crust forms. Carefully flip and cook 2–3 minutes more until opaque and just cooked through (internal temp ~135–140°F/57–60°C). Remove fillets to a warm plate and tent lightly to rest for 2 minutes.

    Optional pan sauce

    If desired, after removing fish, deglaze the pan with 1–2 tbsp white wine or a splash of the saffron broth, scraping up browned bits and swirling in a little butter to make a quick pan sauce. Spoon over fish when plating.

Lemon Oil & Plating

    Make lemon oil

    In a small bowl, combine 1/4 cup extra-virgin olive oil, 1 tsp lemon zest and 1/2 tsp lemon juice. Whisk or stir and season with a pinch of salt to taste. Let sit briefly to infuse.

    Assemble the dish

    Divide the leek-and-potato mixture among 4 warm shallow bowls or plates, making a shallow bed in the center. Place a seared cod fillet on top of each bed. Spoon 3/4 cup saffron broth around (not over) each fillet so the bed and fish sit in a warm golden pool. Drizzle about 1 tsp lemon oil over each fillet and a little around the plate. Garnish with microgreens or chopped parsley.

    Serve

    Serve immediately while fish is hot and broth is steaming. Encourage diners to spoon broth, potatoes and leeks with pieces of cod for balanced bites.
