Method
Cocktail Base
- 1
Combine and dry-shake
In a cocktail shaker, add white rum, dry gin, elderflower liqueur, fresh lemon juice, simple syrup, and the egg white. Do not add ice yet. Seal the shaker and dry-shake vigorously for 20–30 seconds until the mixture is frothy and slightly thickened (this builds a silky foam that will help the 'fade to white' effect).
- 2
Wet-shake
Add 2 large ice cubes to the shaker and shake again vigorously for 10–15 seconds to chill and dilute. Strain through a fine mesh strainer into a chilled coupe or Nick & Nora glass, leaving room for the cloud layer (about 1 cm from rim).
Cloud / Visual Fade
- 3
Prepare the light pigment
If using activated charcoal solution or black sesame tincture, make sure it's very dilute: combine a tiny pinch or a few drops with 5–10 ml of water to create a barely-gray tint. You will use just 0.25 tsp. Chill it slightly. This provides the dark element that will fade upward when overlaid with cream.
- 4
Make the cloud emulsion
In a separate small shaker or jar, combine the cold heavy cream, coconut cream, and the 0.25 tsp of diluted pigment. Add one small ice cube, cap, and shake gently just to chill and lightly aerate — do not whip the cream. The goal is a thin, milky emulsion that will rest on top of the cocktail and create a fading white layer.
- 5
Float the cloud for the fade
Using the back of a bar spoon held just above the surface or by pouring very slowly over the spoon, float the cream emulsion on top of the strained cocktail. Pour in a slow central stream so the cream spreads outward and forms a distinct white layer that gently blends downward at the edges, producing the 'fade to white' visual. If desired, drizzle a single tiny drop of the undiluted charcoal tincture onto the center of the cream and immediately drag it outward with a toothpick to create a subtle gray gradient that fades into the white cloud.
Garnish
- 6
Apply silver and finish
Lightly dust the top of the cream cloud with the edible silver dust (use a small fine sieve or fingertip), concentrating a little toward the center to create a proclamation-like highlight. Twist a lemon peel over the drink to express oils, then groom it into a spiral and place on the rim. Add the micro mint or tiny edible flower nestled into the edge of the cream cloud for a delicate finishing touch.
Serve
- 7
Serve immediately while the foam is still distinct and the cream layer holds. Provide a small stirrer so the guest can choose whether to gently swirl the fade or sip through the cloud. Recommend enjoying in 6–8 sips to appreciate the evolving textures and the aromatic top notes.
