Prepare and chill glass
If desired, place a coupe or rocks glass in the freezer for a few minutes or fill with ice and water to chill while you mix the cocktail.

Combine ingredients
In a cocktail shaker, add 2 oz aged rum, 0.5 oz pimento dram, 1.5 oz pineapple juice, 0.75 oz fresh orange juice and 0.25 oz fresh lime juice (optional). Add 3 dashes Peychaud's bitters. If the pineapple is not very sweet or you prefer a slightly sweeter drink, add 0.25 oz simple syrup.

Add ice and shake
Fill the shaker with ice (enough to nearly fill). Shake vigorously for 12β15 seconds until the shaker is well-chilled and slightly frosted. This both chills and slightly dilutes the cocktail to balance the liqueur and juices.

Strain
Discard ice/water from the chilled glass if you used it. Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh crushed or cubed ice to remove any small pulp or shards of ice.

Express an orange peel over the drink to release oils, then either drop the twist or hook it on the glass rim. Alternatively, float a dehydrated orange wheel on top.

Optionally grate a small amount of fresh nutmeg over the surface for an aromatic, warm note that complements the pimento dram.

Serve immediately. The Peychaud's bitters will add a subtle floral-anise layer; stir once gently if the surface shows separate layers.
