Preparation

Prepare the Filling

In a large bowl, combine rice, chopped onion, parsley, dill, olive oil, salt, pepper, and lemon juice. Mix well and set aside.

Prepare the Vine Leaves

If using preserved vine leaves, rinse them in cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 1-2 minutes until softened.

Stuff the Vine Leaves

Lay a vine leaf flat, place about 1 tablespoon of the filling at the base, fold the sides over the filling, and roll tightly towards the tip. Repeat until all leaves are stuffed.

Cooking

Cook the Dolmathes

Place the stuffed vine leaves seam side down in a pot. Add enough water to cover them and a splash of olive oil. Cover and simmer on low heat for about 30-40 minutes until the rice is cooked.

Prepare the Lemon Sauce

In a saucepan, combine water, lemon juice, cornstarch, salt, and pepper. Cook over medium heat, stirring constantly until thickened. Remove from heat.

Serve

Once the dolmathes are cooked, serve them warm, drizzled with the lemon sauce.
