Prepare the Filling

In a bowl, mix the finely chopped walnuts, almonds, cinnamon, and sugar. Set aside.

Prepare the Phyllo Dough

Thaw the phyllo dough according to package instructions and keep it covered with a damp cloth to prevent drying out.

Assembly

Layer the Phyllo

Preheat the oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter. Layer 8 sheets of phyllo dough in the dish, brushing each layer with melted butter before adding the next. Sprinkle a portion of the nut mixture on top.

Continue Layering

Continue layering with 2 sheets of phyllo, brush with butter, and then add more nuts. Repeat this process until all filling is used, ending with 8 sheets of phyllo on top.

Cut and Bake

Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for 45-50 minutes or until golden brown.

Syrup Preparation

Make the Syrup

While the baklava is baking, in a saucepan, combine water, sugar, honey, and vanilla extract. Bring to a boil, then reduce heat and let simmer for 10-15 minutes until slightly thickened.

Add Syrup to Baklava

Once baklava is done baking, remove it from the oven and pour the syrup evenly over the hot baklava. Allow it to cool completely before serving.
