Method

Prepare the Patties

    Mix the Meats

    In a large bowl, combine the Angus short rib and veal. Season with salt and black pepper. Mix gently until just combined.

    Form the Patties

    Divide the meat mixture into 4 equal portions and shape each portion into a patty, about 1 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Cook the Patties

    Grill the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach desired doneness. During the last minute of cooking, place a slice of Taleggio cheese on each patty to melt.

Prepare the Vegetables

    Roast the Onions

    Slice the red onion into rings and roast them on a grill or in the oven until they are caramelized and tender, about 10-15 minutes.

    Prepare the Tomatoes and Lettuce

    Slice the Kumato tomatoes into thick slices and wash the bibb lettuce leaves.

Prepare the French Fries

    Cut the Potatoes

    Peel the potatoes and cut them into thin strips for fries.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Assemble the Burgers

    Build the Burger

    Toast the brioche buns lightly on the grill. On the bottom half of each bun, layer a leaf of bibb lettuce, a patty with melted Taleggio, a slice of Kumato tomato, and a few roasted red onion rings. Top with the other half of the bun.
