Preparation of Tartare Base

    Cook the Beets

    Begin by washing and trimming the ends of the red beets. Place them in a pot of boiling water and cook for about 30-40 minutes, or until they are tender when pierced with a fork. Once cooked, drain and let them cool.

    Peel and Dice the Beets

    Once the beets have cooled, peel off the skin using your fingers or a paper towel. Dice the beets into small, uniform cubes, about 1/4 inch in size.

    Mix the Tartare Base

    In a mixing bowl, combine the diced beets, mustard, vinegar, and Worcestershire sauce. Stir well to ensure all ingredients are evenly mixed. Adjust seasoning with salt and pepper if desired.

    Slice the pickled cucumber into thin rounds or small dice, depending on your preference for garnish.
