Peel and Dice the Beets
Once the beets have cooled, peel off the skin using your fingers or a paper towel. Dice the beets into small, uniform cubes, about 1/4 inch in size.

Mix the Tartare Base
In a mixing bowl, combine the diced beets, mustard, vinegar, and Worcestershire sauce. Stir well to ensure all ingredients are evenly mixed. Adjust seasoning with salt and pepper if desired.

Prepare the Pickled Cucumber
Slice the pickled cucumber into thin rounds or small dice, depending on your preference for garnish.

To serve, place a portion of the beet tartare in the center of a plate. Arrange the sliced pickled cucumber around it and serve with a side of bread chips for scooping.
