Base Ingredients

Method

Preparation

  1. 1

    Sauté the Base Ingredients

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

  2. 2

    Add Vegetables

Add the diced carrots, celery, zucchini, green beans, and potatoes to the pot. Stir well and cook for about 5 minutes, allowing the vegetables to soften slightly.

  3. 3

    Incorporate Tomatoes and Broth

Pour in the canned diced tomatoes (with their juices) and the vegetable broth. Stir in the bay leaves, oregano, salt, and pepper. Bring the mixture to a boil.

  4. 4

    Simmer the Soup

Once boiling, reduce the heat to low and let the soup simmer uncovered for about 20 minutes, or until the vegetables are tender.

  5. 5

    Cook the Pasta

Add the small pasta to the soup and cook according to package instructions, usually about 8-10 minutes, until al dente.

  6. 6

Finish with Fresh Herbs and Cheese

Once the pasta is cooked, stir in the chopped fresh basil and remove the bay leaves. Serve hot, garnished with grated Parmesan cheese.
