Preparation of Branzino

Prepare the Branzino
Preheat your oven to 400°F (200°C). Rinse the branzino fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Drizzle with Olive Oil
Place the branzino fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets, ensuring they are well-coated.

Cook the Sauce
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings
Add the chopped fresh tomatoes, cherry tomatoes, capers, olives, red pepper flakes, and sugar to the saucepan. Stir to combine and let simmer for 10-15 minutes until the sauce thickens slightly.

Stir in the fresh basil at the end of cooking. Adjust seasoning with salt and pepper to taste.
