Preparing the Steak

    Season the Steak

    Generously season the bone-in ribeye steak with salt and black pepper on both sides. Allow it to sit at room temperature for about 30 minutes to enhance flavor and tenderness.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Sear the Steak

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steak and sear for 3-4 minutes on each side until a golden-brown crust forms.

    Add Rosemary

    Add fresh rosemary sprigs to the skillet during the last minute of searing for added flavor.

    Roast in the Oven

    Transfer the skillet to the preheated oven. Roast the steak for about 15-20 minutes for medium-rare, or until it reaches your desired doneness (internal temperature of 130-135°F).

    Rest the Steak

    Remove the steak from the oven and let it rest for at least 10 minutes before slicing to allow the juices to redistribute.

Preparing the Roasted Potatoes

    Wash and scrub the baby potatoes, then cut them in half if they are larger than a golf ball.

    In a large bowl, toss the potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the oven (alongside the steak if possible) for about 25-30 minutes or until golden brown and fork-tender, turning halfway through.

    Garnish

    Once roasted, remove the potatoes from the oven and sprinkle with fresh parsley before serving.
