Method

Prepare the Tortillas

    Make the Dough

    In a mixing bowl, combine masa harina and salt. Gradually add water, mixing until a smooth dough forms. The dough should be moist but not sticky.

    Shape the Tortillas

    Divide the dough into 10 equal balls. Flatten each ball using a tortilla press or rolling pin, to about 1/8 inch thick.

    Cook the Tortillas

    Heat a non-stick skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side until lightly browned. Keep warm in a towel while you prepare the filling.

Prepare the Chicken Filling

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add chicken thighs and cook until browned on both sides, about 5-7 minutes per side.

    Season the Chicken

    Sprinkle chili powder, cumin, salt, and black pepper over the chicken. Add lime juice and stir to coat the chicken evenly.

    Shred the Chicken

    Once the chicken is cooked through (internal temperature should reach 165°F), remove from heat and let rest for a few minutes. Shred the chicken using two forks and mix in chopped cilantro.

Assemble the Tacos

    Prepare the Toppings

    Chop the red onion, cilantro, and avocado. Set aside.

    Fill the Tortillas

    Take a warm tortilla and add a generous portion of the shredded chicken filling. Top with red onion, cilantro, avocado slices, and a dollop of sour cream.

    Serve

    Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy!
