Marinade Preparation

    Mix the Marinade

    In a large bowl, combine the pineapple juice, white vinegar, chipotle peppers, minced garlic, cumin, oregano, salt, black pepper, and fresh lime juice. Mix until well combined.

    Marinate the Pork

    Add the pork shoulder to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Preheat the Grill or Skillet

    Preheat your grill or a large skillet over medium-high heat.

    Cook the Pork

    Remove the pork from the marinade and discard the marinade. Grill or pan-sear the pork for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Let it Rest

    Once cooked, remove the pork from the heat and let it rest for about 10 minutes before slicing it thinly.

Assembling the Tacos

    Warm the Tortillas

    Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Place a portion of the sliced pork on each tortilla. Top with chopped cilantro, finely chopped onion, and diced pineapple.

    Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy!
