Method

Prepare the Chorizo

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Use a wooden spoon to break it apart as it cooks. Cook for about 5-7 minutes or until browned and fully cooked. Drain excess fat if necessary.

Prepare the Cheese Mixture

    Mix the Cheeses

    In a large mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix thoroughly until all cheeses are well combined.

Combine and Heat

    Combine Chorizo and Cheese

    Add the cooked chorizo to the cheese mixture and mix until evenly distributed.

    Melt the Cheese

    Transfer the chorizo and cheese mixture to an oven-safe skillet or cast-iron pan. Place it in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until the cheese is melted and bubbly.

Prepare the Tortillas

    Warm the Tortillas

    While the cheese is melting, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable.

Serve

    Garnish and Serve

    Once the queso fundido is melted and bubbly, remove it from the oven. Garnish with fresh cilantro and sliced jalapeño. Serve immediately with the warm tortillas.
