Rinse the Rice
Begin by rinsing the long grain white rice under cold water until the water runs clear. This helps remove excess starch and prevent the drink from becoming too thick.

Soak the Rice
In a bowl, combine the rinsed rice and 4 cups of water. Allow the rice to soak for at least 4 hours, or preferably overnight. Soaking helps soften the rice and enhance the flavor.

Blend the Mixture
After soaking, drain the rice and add it to a blender with the soaking water. Add the cinnamon sticks and blend on high until the mixture is smooth, about 1-2 minutes.

Strain the Mixture
Using a fine mesh strainer or cheesecloth, strain the blended rice mixture into a large pitcher to separate the liquid from the solids. Press down on the solids to extract as much liquid as possible.

Serve Chilled or Over Ice
Pour the horchata into glasses over ice cubes, if desired. Optionally, sprinkle with ground cinnamon for garnish before serving.
