Preparation of Green Sauce

    Cook Tomatillos

    In a saucepan, combine tomatillos, jalapeño, and enough water to cover. Bring to a boil, then reduce heat and simmer for about 10 minutes until tomatillos are soft.

    Blend Sauce

    Drain the tomatillos and transfer them to a blender. Add garlic, onion, lime juice, and salt. Blend until smooth.

    Heat Sauce

    In a skillet, heat olive oil over medium heat. Pour in the blended sauce and simmer for about 5-7 minutes, stirring occasionally.

Assembly and Cooking

    Prepare Tortillas

    In a skillet, warm each corn tortilla over medium heat for about 30 seconds on each side until pliable.

    Stuff Tortillas

    Place about 1/4 cup of shredded chicken in the center of each tortilla, sprinkle with some cilantro and a small amount of Monterey Jack cheese.

    Roll Enchiladas

    Carefully roll up each tortilla around the filling and place seam side down in a greased baking dish.

    Top with Sauce

    Pour the green sauce over the rolled enchiladas, ensuring they are well covered. Sprinkle the remaining Monterey Jack cheese on top.

    Bake

    Preheat the oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes until the cheese is melted and bubbly.

    Remove from the oven and let cool for a few minutes. Garnish with additional cilantro if desired. Serve hot.
