Preparation

    Prepare the filling

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and ground cumin, cooking for another minute until fragrant.

    Mix cheese into the filling

    Remove the skillet from heat and add 2 cups of shredded cheese to the onion mixture. Season with salt and black pepper to taste. Mix until well combined.

Assembly

    Fill the tortillas

    Preheat the oven to 350°F (175°C). Take one corn tortilla, and place about 1/4 cup of the cheese filling in the center. Roll the tortilla tightly around the filling and place seam-side down in a 9x13 inch baking dish. Repeat with the remaining tortillas and filling.

    Add the sauce

    Once all the tortillas are in the baking dish, pour the remaining green enchilada sauce evenly over the top. Sprinkle the remaining 1 cup of shredded cheese over the sauce.

Baking

    Bake the enchiladas

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

    Garnish and serve

    Remove from the oven and let cool for a few minutes. Garnish with chopped fresh cilantro before serving.
