Preparing the Fish

Cut and Marinate the Fish
Cut the fresh fish into small, bite-sized cubes (about 1/2 inch). Place the fish in a glass or ceramic bowl and pour the lime juice over the fish, ensuring all pieces are well covered. The acidity from the lime juice will 'cook' the fish. Cover the bowl with plastic wrap and refrigerate for 30-45 minutes, until the fish turns opaque.

After the fish has marinated and the color has changed, drain some of the excess lime juice (you can reserve it for serving). Add the chopped vegetables and finely chopped cilantro to the fish. Season with salt and black pepper, and gently toss everything together until evenly mixed.
