Marinating the Shrimp

Prepare the Marinade
In a bowl, combine the olive oil, minced garlic, minced chipotle peppers, lime juice, salt, and black pepper.

Marinate the Shrimp
Add the cleaned shrimp to the marinade and mix well to coat. Cover and let marinate in the refrigerator for at least 30 minutes.
Cooking the Rice

Rinse the Rice
In a saucepan, rinse the long-grain rice under cold water until the water runs clear.

Cook the Rice
Add the rinsed rice, water, and salt to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

Heat the Beans
In a small saucepan, combine the rinsed black beans, cumin, garlic powder, and salt. Heat over medium-low heat until warmed through, about 5-7 minutes.

In a skillet over medium-high heat, add the marinated shrimp. Cook for about 2-3 minutes on each side or until the shrimp are pink and cooked through.
