Fritter Filling

    Prepare jalapeños

    Wear gloves if preferred. Slice each jalapeño in half lengthwise and remove seeds and membranes with a small spoon to reduce heat. Pat halves dry with paper towel.

    Make filling

    In a medium bowl, combine softened cream cheese, shredded cheddar, chopped cooked bacon, sliced green onions, garlic powder, salt, and black pepper. Mix until smooth and evenly combined.

    Stuff jalapeño halves

    Using a small spoon or piping bag, fill each jalapeño half with the cheese-bacon mixture, pressing to compact so the filling nearly reaches the top but doesn't overflow. Set filled halves on a tray lined with parchment. This recipe makes roughly 16 halves; you will form 6 fritters by grouping pieces (see next steps).

    Assemble fritter mounds

    To create six sizable fritters, take 2–3 filled jalapeño halves (depending on size) and press them together filling-side in, rounded green sides out, making a compact mound of filled pepper pieces about the size of a golf ball to slightly larger. If needed, use a bit more of the cheese mixture to stick halves together. Chill assembled mounds in the fridge for 15–20 minutes to firm up, which helps them hold shape while coating and frying.

Batter & Coating

    Prepare dry mixes

    In a shallow bowl, whisk together 3 tablespoons flour, cornstarch, and baking powder. In a separate shallow dish combine panko breadcrumbs with optional cornmeal for extra crunch. Place 1/2 cup flour for dredging in another shallow plate.

    Make light batter

    In a small bowl, whisk the lightly beaten egg with the cold club soda (or cold water) until combined. Gradually add the flour-cornstarch mixture and whisk until a smooth, slightly thick but pourable batter forms. Batter should coat the back of a spoon; if too thick, thin with 1 teaspoon cold water.

    Dredge and coat

    Working with chilled fritter mounds, lightly dredge each mound in the 1/2 cup flour, shaking off excess. Dip the floured mound into the batter, letting excess drip back into the bowl, then press into the panko mixture to fully coat. For best adhesion, press the panko onto the surface so the fritter is well covered. Set coated fritters on a plate and chill for 5–10 minutes to set the coating.

Frying & Finishing

    Heat oil

    Pour oil into a deep, heavy pot or Dutch oven to a depth of about 2–3 inches (roughly 2 cups suggested). Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of batter — it should sizzle and rise steadily without browning immediately.

    Fry fritters

    Carefully lower 2 fritters at a time into the hot oil to avoid crowding. Fry for 2.5–3.5 minutes per side, turning once with tongs or a slotted spoon, until evenly golden brown and crisp. Total frying time ~5–7 minutes per fritter depending on size. Adjust heat as needed to keep oil between 325–350°F.

    Drain and rest

    Remove fritters to a wire rack set over a baking sheet or to paper towels to drain. Let rest 2–3 minutes — interior will be hot. Garnish with chopped cilantro and serve with lime wedges.

    While fritters chill or fry, whisk together sour cream, mayonnaise, chopped cilantro, lime juice, and 1/4 teaspoon salt in a small bowl. Taste and adjust salt or lime. Transfer to a serving dish and chill until ready to serve.
