House Sauce (Jones Sauce)

Make the sauce

In a small bowl whisk together 3 tbs mayonnaise, 1 tsp Dijon mustard, 1 tsp whole grain mustard, 1 tsp smoked paprika, 1 tsp Worcestershire sauce, 1 tsp apple cider vinegar, 1 tsp honey and (if using) 1 tsp hot sauce. Season with 1/4 tsp salt and 1 tsp freshly ground black pepper. Taste and adjust balance—add a little more honey for sweetness or vinegar for brightness. Refrigerate while assembling sandwich so flavors meld.

Prep meats and produce

If any meats are cold from the fridge, let sit 5–10 minutes to lose chill for better flavor. Pat the bacon dry if not yet crisp; quickly crisp in a skillet over medium heat (about 2–3 minutes per side) until golden and set on paper towel. Rinse tomato and lettuce; slice tomato into three 1/4-inch rounds. Slice pickles lengthwise into two long slices. Lay out roast beef, ham, and turkey in even layers.

Cheese readiness

Stack provolone and Swiss near hand; if you prefer melted cheese, preheat a skillet or sandwich press to medium-low so you can melt cheese briefly during toasting.

Assemble & Toast

Butter and heat

Spread softened butter on the outer sides of each bread slice (the sides that will contact the skillet). Brush the inside of one slice lightly with 1 tsp olive oil to prevent sogginess from sauce.

Sauce and layering

Spread about half of the prepared Jones Sauce evenly on the inside of the bottom slice and the remaining half on the inside of the top slice. On the bottom slice, layer in this order: 1 oz roasted turkey, 2 oz smoked ham, 4 oz roast beef (folded if needed), provolone slices (place over roast beef), Swiss slice, crispy bacon strips, tomato slices, red leaf lettuce, and the dill pickle slices. Press layers gently to compact sandwich.

Toast the sandwich

Place sandwich, buttered side down, in a preheated skillet or on a sandwich press over medium heat. If using a skillet, weight the sandwich lightly with a second pan or spatula. Cook 3–4 minutes per side until bread is golden brown, buttered edges sizzling, and cheese is melting (cover pan with lid for 1–2 minutes if needed to encourage melting). Flip carefully and toast the other side. Total toasting time should be 6–8 minutes.

Rest and serve

Remove sandwich to a cutting board and let rest 1 minute to settle. Using a sharp knife, cut the sandwich diagonally. Serve hot with extra Jones Sauce on the side if desired.
