    Wash and prepare

    Rinse all berries, grapes, and kiwi under cold running water. Pat dry with a clean towel or spin in a salad spinner to remove excess moisture. This helps prevent dilution and keeps the fruit bright.

    Hull and slice

    Hull the strawberries (remove stems) and quarter or halve depending on size so pieces are bite-size (about 1/2-3/4 inch).

    Prepare pineapple and apple

    Peel, core, and cut the pineapple into roughly 1/2- to 3/4-inch pieces. Core and dice the apple into similar bite-size pieces; to prevent browning, toss apple pieces immediately in a small amount of the lime juice provided in the Dressing section.

    Slice kiwi and banana

    Peel and slice the kiwi into coins or half-moons. Slice the banana just before serving and add to the bowl at the end to prevent browning.

    Halve large grapes

    If using large grapes, slice them in half so each bite is easy to eat and consistent with the other fruit pieces.

    Place all prepared fruit (strawberries, blueberries, pineapple, kiwi, grapes, apple) into a large mixing bowl and gently toss to combine. Keep the banana separate until just before serving.

Dressing & garnish

    Make the dressing

    In a small bowl whisk together the fresh lime juice and honey (or maple syrup) until combined and the honey is dissolved. Add a pinch (about 1/4 tsp) of the coarse sea salt if using; it brightens the fruit flavors.

    Add mint and zest

    Stir the finely chopped fresh mint and lime zest into the dressing.

    Dress the fruit

    Pour the dressing over the mixed fruit in the large bowl. Gently fold the dressing through the fruit with a flexible spatula or large spoon until evenly coated. Taste and add up to 3/4 tsp more lime juice or 1/2 tbs more honey if you prefer brighter or sweeter flavors.

    Finish and serve

    Add the sliced banana to the dressed fruit and gently fold once to combine. Transfer to a serving bowl or individual bowls, garnish with a few whole mint leaves and a light sprinkle of additional lime zest if desired. Serve immediately, or chill in the refrigerator up to 1 hour for flavors to meld (avoid longer to prevent fruit juices making the mixture soggy).

    If storing: keep any leftovers in an airtight container in the refrigerator for up to 24 hours; toss gently before serving as some juices may have collected at the bottom.
