Batter

Method

Batter

  1. 1

    Preheat and prepare pan

Preheat the oven to 425°F (220°C). Place a 9-inch cast-iron skillet or an 8-9 inch round cake pan in the oven while it preheats so the pan becomes hot.

  2. 2

    Combine dry ingredients

In a large mixing bowl, whisk together the yellow cornmeal, all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly distributed and there are no lumps.

  3. 3

    Combine wet ingredients

In a separate bowl or large measuring cup, whisk the buttermilk, egg, and the cooled melted butter until smooth and homogenous.

  4. 4

    Mix batter

Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula or wooden spoon until just combined. Scrape the bottom and sides to incorporate dry pockets. The batter should be thick but pourable — do not overmix; a few small lumps are fine.

Pan & Bake

  1. 5

    Heat butter in pan

Carefully remove the preheated skillet or pan from the oven using oven mitts. Add 1 tablespoon unsalted butter and swirl to melt and coat the bottom and sides. The butter will sizzle and may brown slightly — this adds flavor.

  2. 6

    Transfer batter and bake

Pour the batter into the hot buttered pan, smoothing the top lightly with a spatula. Return the pan to the oven and bake at 425°F (220°C) for 18–22 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.

  3. 7

    Cool and finish

Remove the cornbread from the oven and let it rest in the pan for 5–10 minutes. Run a knife around the edge if needed, then invert or slice directly in the pan. If desired, brush the warm top with honey or maple syrup before serving or pass it on the side.
