Slider Patties

Mix and portion
In a large bowl, combine 1 lb ground beef, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1/2 tsp smoked paprika and 1 tbsp Worcestershire sauce. Gently mix with your hands or a fork until just combined — do not overwork the meat. Divide the mixture into 8 equal portions (about 2 oz each) and gently form each into a small, slightly flattened patty about the diameter of the slider buns.

Chill (optional)
For better sear and easier handling, place the formed patties on a tray, cover, and refrigerate for 15–20 minutes while you prepare the sauce and toppings.

Cook patties
Heat a large skillet or griddle over medium-high heat. Add 1 tbsp vegetable oil and swirl to coat. When hot and shimmering, place the patties in a single layer without overcrowding. Cook for 2–3 minutes per side for medium (adjust time for desired doneness). If using a grill, preheat to medium-high and oil the grates. Cook similarly, flipping once.

Make glaze
While patties cook, combine 1/2 cup BBQ sauce, 1 tbsp brown sugar, 1 tbsp apple cider vinegar and 1/2 tsp hot sauce (if using) in a small saucepan. Heat over low-medium heat until simmering gently, stirring frequently so the sugar dissolves and the sauce thickens slightly, about 3–5 minutes. Taste and adjust seasoning — add a pinch of salt or more vinegar to brighten if needed.

Glaze patties
In the last 30–60 seconds of cooking the patties, brush a thin layer of the warm BBQ glaze onto each patty, then flip and brush the other side so both sides are lightly coated and caramelize slightly. If desired, add cheese on top of each patty in the final 30 seconds, cover the pan with a lid to melt the cheese.

Toast buns
Split the 8 slider buns and spread softened butter on the cut sides. On a skillet or griddle over medium heat (or in a 350°F/175°C oven on a baking sheet), toast the buns cut-side down until golden and crisp, about 1–2 minutes on the stovetop or 4–6 minutes in the oven.

Assemble sliders
Place a glazed patty (with melted cheese if using) on the bottom half of each toasted bun. Top each patty with a dill pickle slice and a few thin onion slices. If using coleslaw, add a small scoop on top of the patty before adding the top bun for extra creaminess and tang. Brush a little extra BBQ glaze on the top bun if desired.

Serve
Serve sliders immediately while hot. Provide extra BBQ sauce on the side for dipping. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently in a skillet or oven.
